Field to fork doesn’t get much closer than at a delightful new outdoor dining experience in Hertford
Eating al fresco is one of the simple pleasures in life – settling down with a full table of friends and family to enjoy a long, relaxed food experience. And nothing beats watching the sun go down with a chilled glass of wine over a delicious mid-week supper in an outdoor setting.
An outdoor dining experience, aptly named Roots, is the brainchild of Lee Maycock, the founder of Foxholes Garden Kitchen, a rural farming project in Hertford that plants, grows and cooks in the field, showcasing nature’s organic larder.
At the start of the evening Lee takes guests on a tour of the garden and explains what he has picked and why. Then guests (up to 20) are seated at a long table set up among vegetables and wildflowers where scrumptious food Lee has freshly prepared is served. The menu is decided on the day with produce that is ready, abundant and at its peak. The only produce added comes from Foxholes Farm Shop.
To give you an idea of the culinary extravaganza, Lee offers a five-course tasting menu with garden oven-baked fennel seed cornbread followed by tomato essence, carrot top pesto and borage flowers on warm wood-fired sourdough, smoked beef brisket, pink fir potatoes and ratatouille or spelt risotto, heritage tomatoes and Montgomery cheddar. To complete the evening, he serves up mouth-watering desserts like hedgerow berries, hazelnuts and damson gin trifle.
You can bring you own drinks and there is ice-cold flavoured water with cucumber and wild mint on the table. It all adds up to a magical summer dining experience.
