Recipe: the ultimate strawberry pavlova

Strawberry pavlova recipe
Ingredients (for 8-10)
4 large egg whites
200g caster sugar, plus 1tsp for marinating
500ml double cream
1tbsp icing sugar plus for dusting
2tsp rose water
Chocolate mini-eggs/grated chocolate
Method (prep time 20 mins)
1. Pre-heat oven to 1300C.
2. Using an electric whisk, whip the egg whites until white and frothy. Gradually add sugar by spoonful, whisking well between each spoonful until the sugar is combined and the whites are stiff and glossy. Spoon the meringue on to a lined baking sheet and spread into a circle using a palette knife. Build up the sides so there will be a well in the centre when cooked for the cream. Place in the middle of the oven for an hour.
3. Slice the strawberries in half and mix with the rose water and 1tsp of caster sugar and set aside.
4. Once cooked, the meringue should be crisp and slightly golden but still soft in the middle. Leave to cool on a tray before carefully sliding it on to a serving plate. Spread the cream in the middle of the pavlova and top with the marinated strawberries, mini-eggs or grated chocolate before dusting with icing sugar.
