‘Wholesome and hearty’ dishes originating from England, Scotland, Ireland and Wales are highlighted in what is being billed as a new restaurant concept just opened in St Albans

Independently owned and family run, the aptly-named 4 Nations (4nationsrestaurant.co.uk) is headed by brothers Vincent and Kevin Carroll, from near Cork in Ireland, who have more than 24 years’ experience in the catering industry between them.

The restaurant. which sources ‘good quality ingredients from predominantly Hertfordshire-based business’ and will have a seasonally driven menu, occupies an impressive Tudor beamed building in a courtyard at what was the former 15th-century George Inn.
