Sharon celebrates a ‘Persian creamery’ fusing eastern and western traditions

Let it be known that I’m a bit of a dessert snob. And I recently discovered the most exquisite, mouth-watering fusion of tastes.

Laura Dawson owner of Darlish, specialises in fusing the flavours of the east with classic western sweet treats. Founded in 2016, the company is already award-winning – inspired by Laura’s love of sweet and delicious things from Britain, Iran, India and beyond.

Get ready to embark on a decadent flavoursome adventure. Halva Cheesecake combines a crunchy base with a rich topping. Its intriguing depth comes from the addition of tahini (toasted ground sesame seeds) and has a slightly less sweet character than a classic cheesecake. It’s one for the pudding fiend. Darlish’s Great Taste Award-winning Muscovado Cream has a cult following and, after a single spoonful, you’ll understand why. This is true soul food – a melt-in-the-mouth pot de crème with a handsome burnished flavour that hints at toffee and molasses.

As a self-styled ‘Persian creamery’, Darlish also makes an eight-strong range of ice-creams – and they are every bit as exotic as the puddings. Quirky flavours blend Middle Eastern nuts, fruits and spices with a classic ice-cream base. There’s Chocolate and Halva, Muscovado and Molasses, Orange Blossom and Pistachio, and Rhubarb, Pomegranate and Rose, to name a few.

Darlish will make your life that little bit sweeter. You can find Laura at Herts’ food and drink festivals in the coming months or if you’re in London, these puds have a special place in Selfridges.

You can’t always travel to far flung destinations, but you can always explore the world through taste.
