CELEBRITY chef Paul Bloxham is betting on good weather and promising a summer of al fresco eating at the Tilbury Pub & Dining Rooms in Datchworth.

CELEBRITY chef Paul Bloxham is betting on good weather and promising a summer of al fresco eating at the Tilbury Pub & Dining Rooms in Datchworth. Offerings will include spit roast Sunday lunch using local meats as well as seasonal barbecue favourites like steak and frites, grills, sardines and baby chicken.

The operation moves into the new season after gaining two more accolades - an entry in the 2008 Red Michelin Guide; and nomination as Readers Choice for Hertfordshire in the 2008 Good Food Guide.

In another development, the Tilbury has introduced a regularly-updated new style of menu reflecting what Paul says is his 'passion' for seasonal produce. Current choices include pressed guinea fowl and foie gras terrine, pear pure with toasted brioche followed by loin and ragout of local venison, red cabbage, root vegetables, and herb dumpling. Desserts include passion fruit blancmange with sugar biscuits and raspberry sherbet.
