AN evening of French-Asian delicacies greeted guests at the official launch of one of St Albans' newest restaurants, Chez Mumtaj, by the mayor, Cllr Bert Pawle, last month. The haute cuisine boutique-style venue is the brainchild of award-winning chef Chad Rahman.
Signature dish for the opening was corn-fed chicken breast, tandoored in pickling spices and dry-roasted cumin and thyme. It was stuffed with duxelle of wild woodland mushrooms in a cream of spinach pure with homemade cottage cheese and served with wild black rice and garnished with pomegranate. Chez Mumtaj also boasts a champagne bar and Asian tapas bar.
