Recipe: basil beefsteaks

A quick and easy recipe perfect for the weekend - the sweet aroma of basil really enhances the steak’s flavour
Ingredients (for four)
4 beef steaks
2 tbsp fresh basil leaves
1 small red chilli pepper (chopped and de-seeded)
1 tbsp spoon red wine vinegar
1 tsp balsamic vinegar
1 tbsp dark soya sauce
2 garlic cloves (crushed)
1 tbsp rapeseed oil
1 tsp caster sugar
1 tsp sea salt
1 tsp black pepper
1. Place the garlic and sea-salt in a pestle and mortar and crush to form a paste. Add the basil, chilli pepper and black pepper and continue to bash into a rustic rough mixture. Stir in the soya sauce, red wine vinegar and sugar until the sugar has dissolved.
2. Place the beefsteaks in a dish and pour over the marinade. Leave in the fridge for at least an hour (overnight is even better).
3. Take the beef steaks out of the fridge 10 minutes before cooking, then cook on a medium grill or griddle for 2-3 minutes each side.
4. Leave the meat to rest for one minute then serve. They are great with chunky chips and salad.
