Recipe: Golden Fleece gluten-free five nut roast

A delicious, healthy roast by the Braughing pub-restaurant, winners of the 2017 Hertfordshire Life Food and Drink Awards Pub of the Year and Best Family Dining
Ingredients
250g mixed nuts
100g shallots, (about four small), finely chopped
Olive oil for frying and greasing
400g can chopped tomatoes
1 egg, beaten
100g mature cheddar cheese, finely grated
2 tsp chopped mixed herbs
1 pinch black pepper
Method
Place the nuts in a dry frying pan over a moderate flame. Stir gently until golden, taking care not to burn. Remove to a bowl and leave to cool.
Fry shallots in a little oil until translucent.
Whizz the nuts in a food processor until thoroughly ground.
Preheat the oven to 180C. Generously grease a loaf tin.
In a large bowl, combine the ground nuts with all remaining ingredients. Mix thoroughly.
Scoop the mixture into the loaf tin and bake for 45 minutes to an hour, until firm and golden. Cool slightly, then turn out.
Note: To make a vegan version, omit the egg and use dairy-free mature cheese.
