HERTFORDSHIRE could soon be home to the best restaurant in Britain, if David Cowham has his way. The Watford-based entrepreneur is transforming the former Clarendon Arms at Chandlers Cross and plans to reopen it as The Clarendon in January with a fine-dining outlet as part of the offer. Barry Vera, most recently working in Australia, has been recruited as head chef.
A self-confessed stickler for detail, David says the restaurant will be 'based on the best of everything' he has experienced on his travels. 'We are setting the standards very high,' he says. 'There is little around here that is five-star and it's what I think people in this area need, including me.'
