Sharon Struckman recommends a master butcher based in Hertford to help kick off the barbecue season
It’s May, so use some of those lovely spring days to kick off barbecue season. One of the main ingredients for any barbie is a helping of delicious sausages, and one surefire way of getting those is from master butcher Ronnie MacLeod of the award-winning Hertford Porker sausage company, who creates a variety of divine-tasting sausages from traditional pork to spicy chilli and even gluten-free.
MacLeod moved from Scotland to Hertfordshire more than a decade ago and took the job of manager of D White’s butchers in Braughing, home of the famous Braughing sausage. He struck out on his own a few years ago and set up Hertford Porker Sausages, sourcing local pork and combining it with special spices he imports from China to give his sausages their one-of-a-kind taste.
MacLeod uses 70 per cent pork shoulder with just a little belly fat added and never uses the skin or any mechanically recovered meat. After mincing just once, the pork is mixed with the secret blend of herbs and spices. He then adds a little moistened rusk which helps to give the Hertford Porker range its traditional taste and texture. Finally the mix is placed by hand into a sausage-making machine and pushed into natural hog casings before being hand-linked.
The company sells to pubs, restaurants and shops and MacLeod also runs stalls at farmers’ markets around Hertfordshire. You can find him at Hertford Market every Friday, Hertford Farmers’ Market on the second Saturday of every month, Welwyn Farmers’ Market on the first and third Saturday every month and Hitchin Farmers’ Market on the last Saturday every month.
