Housed in Brocket Hall’s former hunting lodge, Auberge du Lac enjoys an idyllic lakeside setting overlooking the beautiful 543 acre country estate and the Hall itself.
With numerous awards, Auberge du Lac is a five star restaurant which provides the highest standards in cuisine and service.
Whether it is al fresco dining in summer at the water’s edge, or an intimate environment in the winter months, Auberge du Lac provides the right mood for every occasion. With a beautiful lounge, picturesque terrace and a host of tastefully decorated private dining rooms, capable of seating from 2 to 30 guests, the restaurant regularly caters for private dinners, ladies lunches, weddings, birthday parties and other celebrations.
Marcus McGuinness is the Head Chef at Auberge du Lac, the Hertfordshire-based restaurant nestled in the 543-acre parkland of the Brocket Hall Estate. He is currently celebrating his first anniversary in the role, and in this first year, he has already attained two AA Rosettes for the restaurant.
Marcus joined Auberge du Lac from Claude Bosi’s two Michelin Star Mayfair restaurant, Hibiscus, where he was head chef and Bosi’s right-hand man for six years. During his time at Hibiscus, Marcus also starred on BBC TWO’s Great British Menu (2012).
Before moving to London, Marcus spent two years as sous chef at two Michelin Star restaurant, La Champignon Sauvage, in Cheltenham. His career in Michelin rated restaurants stood him in great stead for taking the reins at Auberge du Lac and leading it in a new, exciting direction.
The importance of seasonality inspires Marcus’ style of cooking, and he is extremely passionate about foraging – in fact, he can often be found foraging in the Brocket Hall Estate for ingredients for his sophisticated dishes.
